Between a "cowards punch" and boxers thumping the hell out of each other's heads ??

Dot, the difference is the boxer is expecting it, they know the opponent is going to attempt to knock them down. The coward punch comes from nowhere, and the recipient rarely sees it coming or has the opportunity to defend themselves.

Or at least brace themselves.

Generally resulting falling backwards and hitting the concrete.

V hitting the soft ring floor.

What about the difference between a coward punch and a king hit?

As far as I can tell, the coward punch comes with no warning and generally to someone they don't know and often involves others shielding the coward from view before they take the swing ....

A King Hit is two facing off at the argument stage and the attacker suddenly letting one fly knocking the other person out ..... Neither the coward punch or the king hit are particularly acceptable, nor is putting the nod on someone where the attacker gets up in the other persons face and then strikes them across the bridge of the nose with their forehead, but at least there is sort of a warning with that one and a quick step to the side and the efficient use of the knee turns the tables on the attacker ....
