Dot, I must admit that I was a bit surprised with your porcine technical knowledge. I just assumed that you must have acquired that info in times gone by.

Just for you Dot.
During the slaughter of many of our animals in the abattoirs in Australia much care is taken to restrict the stress to the animals as it does effect the quality of the meat.

There are many processes before slaughter to reduce this stress as well as measures such as electrical stimulation after slaughter to increase the tenderness of the meat, as well as the way the carcass is hung etc to Tenderise the meat before processing. Also there are other process I shall not discuss as it may upset some, but it is all done to firstly ensure a quick and painless death as well as the fast bleed to enhance the final product.

In the trade it is recognised that if an animal is stressed it tends to not bleed properly and this results in a term called dark cutters, eg there is still congealed blood in the meat at the time of cutting the meat from the carcass. This down rates the cuts to the lowest grade and makes it hard to sell for normal human consumption and it usually goes into pies and Macca's etc.

In beef the carcass is dragged alongside a wall that gives electric shocks to cause the muscles to contract and relax to assist in the bleeding and also gets all the tight tendons. Not very scientific explanation but something like that. All I know is to give the carcasses a wide berth whilst on the wall. Have not done it but seen a person jump one day. LOL.

Most large pork slaughter houses use Co2 to put them to sleep so no stress at all as they just go to sleep.

Oh yummy Brian, would you set one up esp for human beings please but keep the stress and pain in the process. I would gladly work there, see another sexual predator was given a "good behaviour bond" for 3 offences  Makes you think what club these judges are in... bit of a "family" club for sure..

Yep we had one of them to.

It was called the condemn screw used for the condemned carcasses.

Would get rid of them in a very short time and they would not even complain. Cheap effective and no recourse and you even would get a return from them as they would be sold as Tallow and meat meal etc so all comes out good.

When we were kids, we mainly killed our own, and the best eating was an old broken mouthed ewe, put her in with the ram, ans as soon as she bloomed, neck her, nice and quiet, not stirred up, all the hormones were working and that was the best meat you would ever get, full of taste, and nice and tender, beats any thing you can buy from the butcher.
I was always told that anything with testicles was only fit for dog food, even the old buck rabbit can get pretty gamy, give me a nice young female any time!
