Lake Ratzcastle?
Fairly central, and you get to ride the roller coaster if travelling from Horsham side.

if you're looking for places to have a get together, there's lake Batyo Catyo about 25klm from St Arnaud in Vic, it's a lovely place with free power toilets, shower and laundry. We camp there a lot when touring that side of Vic, used to have a caretaker but they don't seem to last very long as very few people go there, except during holidays. Then there is Brim, which is another lovely place with all facilities and safe swimming, $10 a night for power.
Then there is lovely Mangoplah, not far from the Rock NSW. It has a great pub, large sporting oval and facilities where we camp, all set in shade trees and lots of places to visit and really nice people.
We stay at lots of really cool places off the beaten track that offer good welcomes and facilities for travellers, many towns have set up facilities for travellers, but people rarely go there, preferring crowds to quiet out of the way gems.

Then there's Gum Bend Lake at Condobolin, about 100k W of Parkes in western NSW, but definitely not on the Easter w/e.
Free camping in a well maintained area with showers & potable water for a gold coin donation.
As per the May 2015 gathering there.

I would think that there won't be many places that aren't busy over Easter. Why Easter anyway? The rest of the year is much better for camping (or parking as the case may be)

Easter gives those still trapped in the work force the work free days to attend a get together. Probably an arc 700Km to 800Km from Mannum would be about our limit, but that takes in a lot of places from streaky Bay to Marree to Menindee to Griffith to Rutherglen to the King Valley to Warragul. But even if the chosen spot is outside that range we could judge it on its merits and the time frame we have available.

Easter time not set in stone (or under a stone)

If someone can name a great spot just give a good amount of time for people to plan ahead then put it up. If people don't like the chosen spot then that is their prob they can then pick another spot to go at a later date.. Come on you lot get decisive, how about we have a week for place suggestions then one gets picked out of a hat??

The vote system still works well Dottie, put forward the suggestions and advantages to using that particular site and each person can look and see if it suits them. No doubt there are a number of members here that would select the majority rules choice as they are reasonably flexible as far as where and when if given enough notice.
