Sorry guys about the crappy quality of the recipe maybe 'Guisepi" can improve this effort for me...

Guiseppi isn't THAT good!!
You can zoom in twice to see it in full size or it maybe easier to right click and "save as" to download it and open with your own graphics program on your computer.

Thanks Dot. I'll fire up the laptop and see how best to save it. A bit useless on the iPad as saving it as an image is too blurry to read.

Believe me it is worth while using the correct stuff especially for a special occasion.. I am sure Dee will be only too happy to answer any of your questions, she's a lovely lady

Hi guys.....
You can use other ingredients! You can use a little bit of curry powder, or similar, instead of saffron, which is really expensive. I get my paella rice online, and the saffron and use Iranian saffron as its stronger so I use less. You can use lamb instead of chook or all veggies....use your imagination....I love adding mussels at the last moment, cover and then the steam opens them up.
If you can't get paella rice, long grain...basmati, will do but it's not as absorbent as the paella rice...and risotto rice is too gluggy.
I just carry a box in the van which is labelled " paella kit" so whenever I get the creative urge its ready!
It's meant to be cooked in a flat bottomed pan, but I've made it in the past in a frying pan quite successfully. And it's a communal 'cookup' .....
Don't forget to cover with foil or a tea towel when finished and 'rest' it.
