True Dot....in Katherine, the DP was blocked/full , but the Rental Van in front of me just kept discharging as it ran over the side. No need for an IQ test to rent or own a Motorhome , even Boss has one

Q/ for those with black tanks, do the tanks have baffles in them?

No baffles in black or grey tanks. The less surfaces for stuff to stick to the better. Our black tank has a rotating spray inside, so when dumping can attach hose and spray down walls to completely empty.

With no baffles do you notice the force of the "contents" sloshing as you drive? That is a good idea of your system Jon.

No sloshing Dot, not that I have ever noticed, maybe too sloshed myself 
My Black and Grey tanks are 180 litres each. They both join end on where the taps are located, so when finished dumping black, we back flush the black from the grey tank.
If necessary we attach the macerator at this point so we can use the 18mm garden hose into a standard toilet, or uphill to a badly positioned Dump Point. We dump at every opportunity, or at least once every two weeks.

My Black and Grey tanks are 180 litres each. They both join end on where the taps are located, so when finished dumping black, we back flush the black from the grey tank.

Interesting, so why do they bother to put baffles into fresh water tanks? Sounds like you have a very good set up Jon. sloshed or not.

It stops the sloshing 
The 'sloshing' can be noisy and allow the water to discharge via the filler or breather.
It can also contribute to cavitation when the pump draws from the 'low' end or side of the container. They also contribute to the strength. I think they are essential in the diesel tank, but relatively unimportant in the fresh water tank in an RV.
On a boat, I think baffles in the Fresh Water tank may be desirable, as water is drawn while the vessel is underway.
