Just tried carpet bag roo. Came out very nice. Could not get fresh oysters so I had to use smoked ones. Left it in fridge for 24 hours to soak through.
It came off bbq very nice and tender. Will get fresh oysters next time though .

Sounds great, Peter. Which cut of roo did you use? I find when I buy prepackaged roo fillet or "steak", the pieces are rather small. Did you do it in a frying pan or...... I love roo and love smoked oysters, so it would be a winner for me. Do you think, given that roo should be cooked only to medium rare, that the raw oyster will get enough heat to warm it? I have some bush plum marinated roo in the freezer. Might be tomorrow night's dinner. Yum!

Maybe another cooking comp for Whitfield, a roo cooking comp on the Sat or Sun night, fish on Friday night, roo Sat or sun and scones on Monday :D Whatdayareckon 8-)
