The recipe stated:

This mix can be made 2 days ahead.
You may also bake this mixture in one 14cm x 21 cm loaf pan at 160c for about 80 mins.

Catriana baked them using a muffin tray.

NOTE: As the name implies these are mini cakes - they will NOT rise to the same extent as muffins.

125g butter, softened.
2 tsp finely grated orange, lemon or lime rind.
1 cup (220g) castor sugar.
3 eggs.
2/3 cup (100g) plain flour.
1/3 cup (50g) self raising flour.
1/2 cup (80g) yoghurt.
2 tblsp poppy seed.

Grease the pan & line the bases with baking paper.

Beat the butter, rind & sugar in a small bowl with an electric mixer until light & fluffy.

Add the eggs one at a time & beat until combined between additions.

Transfer the mixture to a large bowl & stir in the combined sifted flours, then fold in the yoghurt & seeds.

Divide the mixture evenly & bake in a moderately slow oven (160c) for about 30 minutes.

Stand for 5 minutes before turning onto a wire rack to cool.

Suitable to freeze.

NOT suitable for microwave.
