INGREDIENTS
1kg dried mixed fruit ( homebrand - Aldi make a good one )
600 ml flavoured coffee or chocolate milk
2 cups self raising flour
METHOD
soak fruit overnight in the milk. keep in fridge. next day grease a round cake tin and line with baking paper. add flour to fruit mix and combine well.place mix in lined cake tin. cook in camp oven for 2 -- 2 1/2 hrs at heat of around 160 -170 degrees ( 16 heat beads on top 5 under camp oven (12 inch) . check regularly and if starts to darken/ burn too much on top loosely caver with baking paper.
Should be moist and flavoursome.
