fruit cake recipe for camp oven

Thanks to Derek Bullock for this brilliant recipe.

INGREDIENTS
1kg dried mixed fruit ( homebrand - Aldi make a good one )
600 ml flavoured coffee or chocolate milk
2 cups self raising flour

METHOD
soak fruit overnight in the milk. keep in fridge. next day grease a round cake tin and line with baking paper. add flour to fruit mix and combine well.place mix in lined cake tin. cook in camp oven for 2 -- 2 1/2 hrs at heat of around 160 -170 degrees ( 16 heat beads on top 5 under camp oven (12 inch) . check regularly and if starts to darken/ burn too much on top loosely caver with baking paper.

Should be moist and flavoursome.

Hi Alan....... tried this in the house oven also, I did pour a wee bit of sherry in and soaked this first ;) ;) then the milk and another soak overnight, worked a treat and a very nice cake, I cooked mine for about 1 1/2 hours on 180 in a fan forced oven... Can use orange juice in place of milk also very nice.

I also do something similiar, but soak the fruit in fruit juice or cold tea and sometimes add a tab or two of rum.

Always moist and keeps well. I cut in half and freeze one half.

do you still use the same amount of orange juice as milk :?: :?:

Ingredients-always have as long as the fire warden gets the correct temp.

Yes - definitely use the same amount of liquid, otherwise it will be dry and crumbly.
